Crab and Mackerel Boats

Ingredients

  • 1 medium cucumber
  • 1 red chilli, deseeded and diced
  • 1 medium red onion, diced and in a small bowl of water
  • 4 cornichons, diced
  • 3 smoked mackerel fillets (around 200g)
  • 1 lemon and juiced
  • 3 tablespoons mayo
  • 2 soft-boiled eggs, peeled and quartered
  • 100g picked white crab meat
  • Small bunch parsley, finely chopped
  • Baby gem lettuce leaves, rinsed and dried
  • Handful of chervil leaves, wrapped in damp kitchen towel
  • Rye crisps
