Spicy Scotch Eggs

Ingredients

  • 470g sausage meat
  • 180g Calabrian ‘nduja
  • 2 tsp chilli flakes
  • 1 tsp sweet paprika
  • 1 clove garlic, crushed
  • 1 small shallot, finely chopped
  • 8 medium eggs, soft boiled and peeled
  • In three wide bowls: 2 eggs, beaten
  • 100g gluten free flour, seasoned with Kosher salt
  • 100g gluten free breadcrumbs
  • Vegetable oil (for deep frying)
